Did you thaw out your turkey as I suggested
earlier in the week? I sure hope so. The bacteria in mine is now doubling every 24 hours ensuring my turkey will be tender, juicy, and full of flavor on Thursday once we cook it!

"Tim, I was a professional cook many years ago and trained by the best. I have cooked THOUSANDS of turkeys and chickens and Cornish hens.
I like your brining article and have done that with success. But almost everyone cooks their bird wrong! Â

Birds should be cooked BREAST DOWN not breast up! Why? Duh?! The breast has NO FAT! All the fat in  a bird is on its back. If you cook the bird "breast
down" you get this constant basting from all the fat on the back melting down the bird. Â

Most want a "browned breast" and that is why they cook breast up. I don't know about you but I prefer a breast with flavor vs looks. Â A "fatted" breast
tastes MUCH better than a dried breast that looks pretty!

If you want the best of both worlds, cook "breast down" except for the last 30 minutes. Then flip it to cook "breast up" to make it look pretty. But
seriously, after you cut it, who knows if it was cooked up or down from the looks??!! Â Â

BTW, I have cooked birds in the oven; on the grill; deep fried; whole; and "cut in pieces". I was taught how to cut birds raw in sections so we could cook
them in half the time as a whole bird. Cut birds were always more juicy than whole birds. Even those brined!!! Â
